Cajun Seafood Pasta

This is a very spicy dish, but one of the best that I have had. It’s absolutely delicious. You can change the hotness by adjusting the red peppers.

Ingredients -

2 Cups Heavy Whipping Cream
1 Tablespoon Fresh Basil, chopped
1 Tablespoon Fresh Thyme, chopped
2 Teaspoons Sea Salt
2 Teaspoons Fresh Ground Black Pepper
1 1/2 Teaspoons Crushed Red Pepper Flakes
1 Teaspoon Ground White Pepper
1 Cup Green Onions, chopped
1 Cup Parsley, chopped
1/2 Pound Shrimp, peeled and deveined
1/2 Pound Scallops
1/2 Cup Swiss Cheese, shredded
1/2 Cup Parmesan Cheese, grated
1 Pound Dry Fettuccine Pasta

 
Preparation:

1. In a large pot of salted boiling water cook the pasta until al dente.

2. Meanwhile, pour the cream into a large skillet.

3. Cook the cream over medium heat, stirring constantly, until almost boiling.

4. Reduce the heat, and add the herbs, salt, peppers, onions, and parsley.

5. Simmer 7 to 8 minutes, or until thickened.

6. Stir in the seafood, cooking until the shrimp are translucent.

7. Stir in the cheeses, blending well.

8. Drain pasta.

9. Serve sauce over noodles.

Pastas that are not made from semolina will produce softer noodles and do not hold up well when tossed. Non-semolina pastas are perfect for casserole dishes.
