Gorgonzola Chicken Penne

This dish is creamy, velvety and down-right scrumptious. It’s a recipe you will make over and over.
Ingredients -
2 Cups Penne Pasta (uncooked)
2 Cups Fresh Broccoli Florets
1 Tablespoon Water
1 Pound Boneless Skinless Chicken Breasts (cubed)
9 Tablespoons Butter (divided)
1 Large Onion (chopped)
6 Tablespoons All-Purpose Flour
2 Cups Chicken Broth
3/4 Cup White Wine
1 1/2 Cups Crumbled Gorgonzola Cheese (6 ounces)
Fresh Ground Black Pepper to taste
 
Preparation:

1. Cook pasta according to package directions.

2. Place broccoli and water in a small microwave-safe bowl.

3. Cover and microwave on high for 2 to2 1/2 minutes or until crisp-tender.

4. Set aside.

5. In a large skillet, sauté chicken in 3 tablespoons butter until middle is no longer pink.

6. Remove and keep on low.

7. In the same skillet, sauté onion in remaining butter until opaque.

8. Stir in flour until blended.

9. Gradually add broth and wine.

10. Bring to a boil.

11. Cook and stir for 2 minutes or until thickened.

12. Reduce heat to low.

13. Stir in cheese until blended.

14. Drain the pasta and broccoli.

15. Add to the onion mixture.

16. Add the cooked chicken.

17. Heat through.

18. Season with pepper.

Prevent Soft Pasta
To prevent soft, mushy pasta, do not allow the pasta to be in the water any longer than necessary by adding it only when the water is at a full boil and by keeping it at a steady boil throughout the cooking time.
