Shiitake Angel Hair Pasta

This dish tastes really great with grilled beef dishes. It’s your choice what kind of beef to use but below I will give you a great idea of what I do to add to the dish. You will make this savory dish over and over!
Ingredients -
Angel Hair Pasta (6 ounces)
Fresh Shiitake Mushrooms (6 ounces, sliced)
1 Clove Garlic (minced)
1/2 White Onion (chopped)
1/4 Cup White Wine
1 Tablespoon Extra Virgin Olive Oil
1/4 Cup Chicken Broth
1/2 Cup Heavy Whipping Cream
Salt and Fresh Ground Black Pepper to taste
2 Tablespoons Parmesan Cheese (grated)
2 Tablespoons Fresh Parsley (chopped)
 
Preparation:

1. Sauté garlic and onion in olive oil over medium heat.

2. When the garlic and onion aroma develops add the mushrooms.

3. Add the chicken stock and wine.

4. Cook until the mixture is reduced by ½.

5. Blend in cream.

6. Reduce to desired thickness.

7. Season with salt and pepper to taste.

8. In a large pot of boiling add ½ teaspoon of salt to the water.

9. Cook until al dente.

10. Drain pasta in a colander.

11. Toss with sauce until coated.

12. Serve on small warmed plates.

13. Top with grated Parmesan cheese and parsley.

 



Cooking Tip
Beef
This dish as I said before tastes really great with beef. Any beef will do (sirloin, flank, shank, round etc.) I choose to use Sirloin. I slice it about ¼ inch think and place inside a piece of aluminum foil with a slice of butter, sprinkle of garlic, dash of fresh ground black pepper, slice of lemon and a sprig of rosemary. Wrap it up and stick it either in the oven on 375 for approximately 15 minutes (make sure you check the doneness to your liking.) or you can throw it on the outdoor grill. That is my preference!!! When you are making dishes that include wine, make sure you always use the wine that you intend on drinking with the meal so that the flavors always compliment themselves.
